This one’s for the dairy-free and gluten-free friends. Enjoy our easy white chicken chili on a weeknight or bring it to Sunday afternoon football in a crock pot. This dish is a crowd pleaser and I bet you’ll ask yourself, what other soups can I make better with coconut milk?

Stove top
Heat 2 tablespoons of a neutral oil in a heavy bottomed pot over medium high heat.
Add the onion and red bell pepper and sauté until translucent.
Add the garlic and sauté for 30 seconds until fragrant.
Add the great white beans, chili powder, cumin, smoked paprika, oregano, and chipotle chili powder.
Coat everything evenly in the spices, then add your chicken stock scraping the bottom of the pan to release the fond.
Lay the chicken breast on top of the beans, pepper, and onion and bring to a simmer.
Cover and let simmer for 20 minutes or until the chicken reaches 165º.
Remove the chicken and shred on a cutting board. Then add the chicken and its juices back to the pot.
Remove from heat and add the coconut milk, juice of one lime, salt and pepper to taste. Garnish with cilantro and serve.
Crockpot
Add the onion, red bell pepper, great white beans, and garlic to the bottom of the crockpot.
Add the chili powder, cumin, smoked paprika, oregano, and chipotle chili powder.
Lay the chicken breast on top of the beans, pepper, and onion.
Pour the chicken stock over the chicken breast. Make sure the chicken is submerged, but not touching the bottom of the crockpot.
Cook on low for 5 hours or on high for 3 hours.
Remove the chicken and shred on a cutting board. Then add the chicken and its juices back to the crockpot.
Set the crockpot to warm and add the coconut milk, juice of one lime, salt and pepper to taste.
Garnish with cilantro and serve.

1.5 lbs chicken breast
1 red bell pepper, diced
1 sweet onion, diced
5 cloves of garlic, minced
1, 15 oz can great white northern beans
4 cups chicken stock
2 teaspoons chili powder
2 teaspoons cumin
1 teaspoon smoked paprika
1 teaspoon oregano
1/2 teaspoon chipotle chili powder (optional)
1 15oz. can coconut milk
1 lime
